Domowe bagietki / Homemade baguettes

Bagietki wymagają dużo naszego czasu i siły. Ale końcowy efekt jest tego warty. Wierzcie mi. Bagietki są przepyszne zwłaszcza niedługo po wyjęciu z pieca. Wiem, wiem. Ciepłe pieczywo jest niezdrowe dla żołądka, ale skórka jest tak chrupiąca a bagietka pyszna i pachnąca delikatnie oliwkami, więc nie będziecie mogli się oprzeć. Domowe bagietki zachowują świeżość znacznie dłużej niż te, które kupujecie w sklepie.

Składniki (2 bagietki)
500g mąki
300ml letniej wody
10-20 g soli
30g świeżych drożdży piekarskich
10-50ml oliwy z oliwek lub stopionego masła




1. Rozpuść drożdże w letniej wodzie
2. Dodaj mieszaninę drożdży i wody do mąki wymieszanej z solą.

3. Dobrze wymieszaj wszystkie składniki
4. Wyrabiaj ciasto przez około 10-15 minut. Zasada jest taka, że im dłużej tym lepiej. Kiedy chcę, żeby moje bagietki były jeszcze lepsze to wyrabiam ciasto nawet pół godziny
5. Do ciasta dodaj oliwę z oliwek lub roztopione masło
6. Wyrabiaj ciasto przez kolejne 15 minut
7. Przełóż ciasto do miski nasmarowanej cienko oliwą i przykryj bawełnianą ściereczką
8. Odstaw w ciepłe miejsce do wyrośnięcia na 10-15 minut.
9. Znowu wyrób ciasto
10. Odstaw na kolejne 10 minut w ciepłe miejsce do wyrośnięcia
11. Ponownie wyrób ciasto i odstaw na 10 minut
12. Ostatni raz wyrób ciasto i uformuj dwie bagietki
13. Umieść uformowane bagietki na papierze do pieczenia
14. Przykryj i odstaw do ostatniego wyrośnięcia na 20 minut
15. Przed wstawieniem do piece natnij wierch bagietki ostrym nożem oraz posmaruj całą powierzchnę odrobina wody

16. Piecz w temp 180°C przez około 30 minut.

Divine baguettes

This recipe is time and strenght consuming but definitely worth all your efforts. It is actually the best baguette on earth. And I really mean it. Especially when eaten just after taking it out from the oven. I know, I know. It’s not healthy for your stomach but so delicious you simply won’t be able to resist temptation. Your baguette will stay fresh for quite long compared to store bought ones.
Ingredients (2 baguettes) 500g of flour
300ml of lukewarm water
10-20 g of salt
30g of fresh yeast
10-50ml of olive oil or melted butter
1. Dissolve yeast in the lukewarm water
2. Add yeast and water mixture to flour mixed with salt
3. Mix until all ingredients are well combined.
4. Knead the dough well for approximately 10 -15 minutes. In general the longer the better. When I want my baguettes to be divine I knead the dough for even 30 minutes.
5. Add olive oil or metled butter to the dough
6. Knead the dought for as long as 15 minutes.
7. Place the dough in the bowl that was previously slightly oiled with olive oil.
8. Let it rest for approximately 10 – 15 minutes and then work the dough again to evenly spread the carbon dioxide produced by yeast.
9. Let it rest for 10 minutes again.
10. Knead the dough again and let it rest for 10 minutes more.
11. Knead the dough and form two baguettes.
12. Place them on the baking paper on a baking tray

13. Let it rest for 20 minutes more.
14. Before placing them in the oven smear some water on their surface.
15. Bake at 180°C for approximately 30 minutes.
